Citrus Ginger Salsa

Ingredients

Pico de Gallo

Tacos

  • 6 Corn tortillas
  • 1 1/2 cups (350 mL) Chicken, cooked and pulled.
  • 1 cup (250 mL) Citrus ginger salsa
  • 1 Avocado, diced
  • 1 cup (250 mL) Lettuce leaves, torn
  • 1 cup (250 mL) Carrot, grated
  • 1 cup (250 mL) Cheese, jalapeño grated
  • 1/2 cup (125 mL) Coriander leaves
  • 1 Lime, cut into 6 wedges

Makes 6 portions

Prep time: 30 minutes + 3 hours

Cook time: 10 minutes

Method

Pico de Gallo

  1. Place all the ingredients above into a small bowl and mix well. Chill for 3 hours to allow the tea flavour to develop.
  2. Optional. Add 1 small jalapeño or serrano pepper, finely chopped.

Tacos

  1. Warm tortillas and evenly divide the ingredients above and top the tortilla in the following order – lettuce, pulled chicken, salsa, carrot, avocado, cheese and coriander leaves.
  2. Top each with 1 tbsp (15 mL) salsa and serve the remaining salsa on the side.
